The markets are coming; the markets are coming! Get ready for the regular weekly season opening of the Davidson Farmer’s Market, and celebrate the 20th anniversary of the Matthews Community Farmers’ Market this Saturday, April 9th. As a reminder, the Atherton Market continues to be open year-round.
As we quickly transition into warmer weather, Charlotte Fresh likes to spend more time playing outside than cooking indoors, so I’m sharing one of my transitional season lazy slow cooker dinners before all the grilling begins. Hit the markets this weekend for some market fun and get some inputs for this easy meal!
Fresh Recipe: Slow Cooker Chicken with Kale
- 1 lb. chicken breast (skin on and bone-in) – I used Baucom’s Best
- 1 sliced lemon
- 1/4 C white wine
- 1 Tbs fresh oregano, chopped
- 1 Tbs fresh thyme
- 1 Tbs fresh rosemary, chopped
- 1 bay leaf
- salt & pepper
- 1 Tbs olive oil
- 3-4 C kale, chopped – I used Hinson Farms
- Pasta or other starch of choice
Place the chicken in the slow cooker. Rub olive oil on chicken. Put lemon slices on the chicken. Pour in white wine. Sprinkle over the chicken the oregano, thyme, rosemary and salt & pepper to taste. Add bay leaf to the pot. Slow cook according to your manufacturer’s directions for 8 hours. Add the chopped kale in the last 10 minutes to allow to wilt. Shred chicken and serve with pasta or other starch of your choice. Yum…easy. Now go outside and enjoy the sun!
